Paleo/Zone Breakfast Scramble

Ingredient List:

 4 egg whites; 1.25 cups chopped bell peppers (red, green, yellow); .66 cups chopped red onion; 3oz chopped boneless skinless chicken breast; 5tbsp avocado (~1/4 large haas avocado sliced); 4 cups fresh spinach; 1 cup fresh pineapple; cayenne pepper to taste.

The prep…

This meal consisted of ingredients that almost entirely came from a previously prepared meal.  The onions and peppers were cooked on skewers, kabob style, at a BBQ the previous day.  Two, 12″ skewers full of onions, and assorted peppers yielded enough ingredients for this scramble.  Chop onions and peppers in to half inch pieces and use a measuring cup to determine exactly the correct quantity for your scramble.  Once chopped and measured, place onions and peppers into a bowl.  The chicken breast was also BBQ’d the previous day.  Chop 3 oz of chicken breast and place along with onions and peppers in bowl.  The pineapple was also placed on the BBQ grill for about 2 to 3 minutes on each side over medium heat. 

Time to cook…

Pour the egg whites onto a thoroughly pre-heated skillet (medium heat).  Immediately add chopped ingredients on top of egg whites and mix into the scramble.  Since all ingredients minus the egg whites have already been cooked, this process will only take 2 to 3 minutes.  On separate section of skillet, pour 1tbsp olive oil and place spinach directly on skillet.  By now the scramble will have been heated through.  Place entire contents of scramble on top of spinach bed  and allow to cook for 3o seconds.  Mix spinach into scramble once it has started to change texture.

Serve it up…

Plate scramble with avocado slices on top and dust with cayenne pepper to taste.  Place pineapple wedges alongside scramble (makes for a nice dessert).
